This faculty-led program offers students a hands-on learning experience in sustainable agriculture and cultural heritage. Set against the stunning backdrops of Cork, Dublin and Kerry, students will gain firsthand experience in how traditional farming practices have evolved to meet the demands of amodern eco-conscious world.The program is designed to offer a balance between academic enrichment and cultural exploration, giving participants the opportunity to learn fromlocal experts, visit renowned sites and experience Ireland’srural and urban landscapes.

Throughout the program, students will attendexpert-led guest lecturesthat explore the intersections ofsustainability,agricultureandenvironmental practices. These lectures, combined with site visits, will allow participants to develop a comprehensive understanding of how Ireland’s agricultural sector is embracing sustainability while preserving its cultural heritage. The program also provides ample opportunities for exploration, allowing students to immerse themselves in the local culture, engage with communities and experience thewarmth of Irish hospitality.

Itinerary

  • Day 1

    Morning

    Arrive in Dublin and get picked up by your guide at Dublin Airport.

    Late Morning / Afternoon

    Travel to Kildare to visit the Irish National Stud and Gardens where you will partake in a guided tour of this world-famous thoroughbred horse breeding facility and farm. You will have the opportunity to learn about their sustainable breeding program, as well as their sustainable farming policy to protect and enhance the natural environment, the racehorse and the unique heritage of Irish horse racing.

    Late Afternoon

    Travel to Cork and check-in to your accommodation.

    Evening

    Welcome dinner at a local restaurant.

    Morning

    Walking tour of Cork City plus a visit to the historic Shandon area where you will visit the famous Butter Museum. This museum showcases the evolution of butter production, from traditional farmhouse methods to its rise as a key export. At its peak in the 19th century, The Cork Butter Market was the world’s largest exporter of butter in the world. A highlight of the museum is the butter-making demonstration, where guests can witness the traditional methods in action and even sample the freshly made butter.

Here, you will have the opportunity to take a lunch in the Farmgate Café and enjoy the atmosphere in this busy city centre hub.

During the tour, you will visit Molly Gallivan's cultural centre. This attraction offers visitors a charming glimpse into traditional Irish rural life, combining history, culture, and stunning natural beauty. This 200- year-old family farm and heritage site, nestled in the scenic Beara Peninsula, showcases the ingenuity and resilience of Molly Gallivan, a widow who supported her seven children through her resourceful farming and illicit whiskey distilling. One of the highlights of a visit to Molly Gallivan's is the guided tour, which includes demonstrations of traditional farming practices, such as butter making and turf cutting. The tour also delves into the history of poitín (Irish moonshine) distillation, providing a fascinating insight into this once illicit trade.

    Depart Cork in the early morning to travel to Dublin with a stop at The Donkey Sanctuary on the way for a few hours.

Here, you will have the opportunity to learn about the rescue and rehabilitation project organized by the owners, as well as meet the donkeys and walk the nature trails around the farm.)

    Morning

    Hop-on, Hop-off tour of Dublin City Centre to see such attractions as Trinity College (Book of Kells possible), O’ Connell Street, The Spire, Temple Bar, Grafton

    Street, Dublin Castle etc.

    Afternoon

    Travel 25 minutes south of Dublin City to visit Olly’s Farm where you will partake in a guided tour of this honey producing site.

    Morning & Afternoon

    Travel 45 minutes south of Dublin City to visit Airfield Estate.

The estate is a working farm and gardens spread over 38 acres, with a history dating back to the early 20th century. The estate also features a working farm where visitors can see cows being milked, collect eggs from the hen house, and observe sheep, pigs, goats, and other farm animals. The farm demonstrates sustainable agricultural practices and promotes awareness of where food comes from.

    The beautifully maintained gardens at Airfield Estate include ornamental gardens, a walled garden, and a food garden where a variety of fruits, vegetables, and herbs are grown. These gardens offer a peaceful retreat and are a great place for a leisurely stroll. The estate also includes several walking trails that wind through its woodlands, providing a natural habitat for local wildlife and a serene environment for visitors to enjoy.
